With both carry out and sit-down options, the restaurant came into being this summer as the founders moved to Colorado from Florida as “American Medical Refugees” to put their daughter through a cannabis-centered treatment for cancer. Mother Muff’s Kitchen and Spirits At 25th and Colorado, Mother Muff’s Kitchen and Spirits is a restaurant open “morning to moonset”, priding itself on a full breakfast, lunch, and dinner served 8 A.M. – 12 A.M. Live music and sports are often on the restaurant’s calendar, as well as a slew of other events. The eatery itself is the historic location and former home of Meadow Muffins, a place for drinking and dancing long involved with the Colorado Springs community. x

Coquette’s Bistro and Bakery Coquette’s Bistro and Bakery offers gluten free cuisine with an emphasis on French-inspired dishes. In the middle of downtown at 616 S. Tejon St., Coquettes is a great place to go regardless of any dietary restrictions or choices given the vegan and vegetarian menu items. x

 

Mountain Shadows A popular brunch destination, Mountain Shadows is conveniently located on the Colorado Springs West Side at 2223 W. Colorado Ave. A little taste of Colorado in every bite, giant cinnamon rolls and fresh-brewed coffee bring mountain charm right into the heart of town and onto your plate. x

Kura Japanese Restaurant!! Located at 3479 Research Pkwy, Kura is known for their happy hour specials from 4-6 P.M. every weekday and extensive sushi menu. Having been referred to as the “best sushi in Colorado Springs”, locals can attest to its quality. Coronado’s very own Coach Stoughton praises the restaurant, saying that The crazy spicy role is phenomenal – phenomenal!” x

 

Front Range BBQ Front Range BBQ hosts a plethora of Rock, Country, Folk, and Bluegrass music weekly in addition to heaping portions of southern food and BBQ. Having been featured on Drive-Ins, Diners, and Dives, the restaurant is becoming a popular tourist destination. Vallejos Family owned and operated from the beginning, Vallejos is a quaint little taco shop serving up authentic mexican food all from original family recipes. At 111 S. Corona St., the place can be hard to find but once you do it’ll only be more difficult to keep from coming back.
